Every morning, our head chef personally selects the day’s ingredients from Toyosu Market, working exclusively with renowned wholesalers such as Hinacho, a tuna specialist founded in 161 years ago, and Yamaji, trusted by Japan’s most prestigious restaurants.

Thanks to decades of experience and deep relationships within the market, we procure fish at their absolute peak—judged by color, freshness, and balance of fat—changing season by season.

Our signature course begins with Steamed Abalone with Liver Sauce, followed by creations such as Simmered Shark Fin Nigiri with Caviar, where ingredients typically associated with Chinese cuisine are reimagined through refined Japanese dashi.

The sushi rice—an exquisite balance of red vinegar and rice vinegar—is temperature-controlled and delicately seasoned grain by grain, reaching perfection only when paired with seasonal seafood.

Respecting Edomae traditions while continually evolving, each piece is shaped with intention and care, served as a main dish from beginning to end.

A devoted sake enthusiast, our head chef selects rare bottles from multiple specialty retailers—labels seldom found even in Tokyo.

Sake such as Hidakami and Bakuren are rotated weekly to reflect the season.

In addition, our sommelier travels across Japan to personally select Japanese wines that harmonize beautifully with Kourin’s cuisine.

What are your business hours and closing days?

We are open from 17:00 to 23:00 on Monday, Tuesday, Thursday, Friday, Saturday, and Sunday.
We are closed on Wednesdays and on the 1st and 3rd Tuesdays of each month.
All seating is operated on a simultaneous start system, with a 2-hour dining time.
Available start times are 17:00 / 18:00 / 19:00 / 20:30.

There are no private rooms or group reservations, and the restaurant is non-smoking throughout.
There is no parking available.
Reservations are required, and due to the simultaneous start system, punctual arrival is essential.

We offer a wide selection of Japanese sake and wine, including premium sake such as Hidakami, as well as Champagne and both red and white wines.

A Non-Alcoholic Pairing option (JPY 2,600) is also available, featuring four carefully selected beverages such as specialty teas and non-alcoholic wine.
